Somebody tell me how they know this number or any large quantity of anything, especially before computers.

The number is somewhere between 6,000 and 7,000. Probably the best known statistics on this is SIL's Ethnologue which counts 6,909 languages. See <http://www.ethnologue.com/ethno_docs/distribution.asp?by=size>.
